The Procurement Process
From pasture to your freezer, we handle every step with artisanal care and transparency.
1. Reserve
Place your $250 deposit to secure your lamb. Deposits are applied in full to your final invoice.
2. Customization
Your cut sheet decides everything — whole leg roasts or steaks, chop thickness, diced shoulder, merguez, or kofta.
3. Hand Processing
Hand-processed in small batches under USDA inspection — Halal certified under HMS — then chilled and packed the same day.
4. Fulfillment
Pay the balance and pick up at our farm or schedule delivery across NY & CT.
